PASCALS PRESIDENT CAKE

CAKE BOTTOM

- 72 g of egg yolk
- 260 g of egg
- 180 g sugar
- 180 g flour
- 32 g of cocoa
- 55 g unsalted butter

CHOCOLATE SYRUP

- 370 g of water
- 170 g sugar
- 25 g of cocoa

CHOCOLATE MOUSSE

- 140 g of egg yolk
- 80 g of water
- 110 g of sugar
- 440 g dark chocolate (seventy percent)
- 750 g cream

CHOCOLATE FANS

- 1 kg chocolate dark chocolate (seventy percent)
- 100 g sunflower oil

PREPARING

CAKE BOTTOM

Melt the butter and cool to 40 C. Whip egg dose of egg yolk, egg and sugar.
Turn in sifted flour and cocoa, then butter.
Stir at 180 C for 20-30 minutes. Feel free to test with a knitting stick! When the knitting needle is dry it is finished.

CHOCOLATE SYRUP

Have all the ingredients in a saucepan and cook up.

CHOCOLATE MOUSSE

Boil water and sugar. Beat the sugarcloth into the egg yolks and whip up the egg dose.
Melt the chocolate and have in the egg mixture. Turn in whipped cream.

CHOCOLATE FANS

Mix together and melt in a water bath.
Grease hot chocolate over a hot metal plate, grease as thin as you can.
Put the plate in the fridge.
Use a scraper and make flower leaves shaped like small flamenco fans (small triangles with waves).

GENERAL

Divide the cake bottom into two.
Have one cake bottom in the mold and dip well with coconut syrup. Have a layer of chocolate mousse. Repeat the process of the second cake and coconut syrup, and the filling chocolate mousse until the mold is full.
Put in the freezer and allow to stand until the cake is frozen.
Meanwhile, chocolate fans are made.
Dip the chocolate vials on the cake to a pretty flower.
Finally make a chocolate band to stick around the cake. Place a PVC plastic tape on the table, long enough to cling the pie to the circumference, and preferably high enough to cover the height of the cake. Lubricate the same chocolate that you used for the fans.
The chocolate must stiffen before removing the pvc tape. Then decorate with cocoa.

DOUGH

- 50 g fresh yeast
- 1 ss sugar
- 100 ml warm water

Let stay 10 minutes. Mix then together and add to the yeast mixture:

- 1 ts salt
- 1 egg
- 250 g milk
- 100 g oil
- 7 ss sugar

Add gradually:

700 g flour

PREPARING

Let rise for 30 minutes. Shape the buns and let rise 15 more minutes. Pencil with an egg before putting in oven at 200*C for 15 minutes in middle for baking time.

RUSSIAN HONEY CAKE

DOUGH

- Wheat flour 500 g (maybe a little more or less, depends on the quality and gluten of the flour)
- Egg 2 pieces
- Sugar 200 g
- Butter 80 g 
- Honey 115 g (about 3 tablespoons with a hill)
- Soda 2 ts without slide

CREAM

- Creme fraiche (fat content 25-30%) 400 gr
- Cream 33% 150 gr
- Boiled condensed milk of 1 can (380-400 gr)
- Honey 2 tablespoons with a hill

PREPARING

Mix all of the ingredients for the cake together. When adding soda, use one big ss and a couple of drops with hot water to disolve it. 

1) Cut the dough in aprox. 8 pieces.
2) Roll the dough out to aprox. the size of a pancake. The sides do not need to be even yet. 
3) Poke some holes in the dough with a fork and place it in the oven for 3-7 minutes (until golden) on 200*C. Do this with all of the pieces.
4) When taking the ready crust out, put it on a flat space quickly and cut it into a perfect circle with a medium sized pan-lid. Or simply just a plate, and cut around the edges. 
5) collect the left overs into the mixer and crumble it. This will be our topping later.
NOTE: the crusts will be very heard, but do not fear - it is correct :) 

When making the cream make sure to whip the cream until steady first and then add the rest of the ingredients.

When spreading the cream on each crust, make sure it is aprox. 2 cm of cream between each crust. Add then the crumbled crust to the sides and topping of the cake.

Leave then the cake over night in the fridge, and it should be nice and moist the next day!

AVOCADO TOAST WITH POACHED EGG

A simple way to start your day is with a delicious toast with some melted butter, cut avocado topped with a poached egg and seasoned with salt, pepper and sesame seeds!

To poach an egg you simply boil some water, add some salt and 1 ts vinegar, turn down the heat so that the water does not bubble, but is still boiling, open an egg and pour it quickly into the water! Boil about 4-5 minutes according to how you like your egg!

AMERICAN PANCAKES

- 1 cups all purpose flour
- cup granulated sugar
- 1 Tbs soda (pour hot water and mix in spoon before adding)
- tsp salt
- cup whole milk
- 1 large egg, lightly beaten
- 4 Tbs unsalted butter, barely melted
- 1 tsp vanilla extract

PREPARING

When mixed, the consistency of the mixture might seem very thick, but when added to the frying pan and heated, they make the most incredible and fluffiest pacakes!

DHAL CURRY

- 1 tbsp olive oil
- 1 small onion (diced)
- 4 garlic cloves (minced)
- 3 medium potatoes (chopped small)
- 1 tsp ginger 
- 1/2 tsp chili powder
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 1/2 tsp cinnamon
- 1/2 tsp paprika
- 3 tbsp red curry paste
- 1.5 cups diced tomatoes
- 1 can coconut cream
- 1 cup red lentils
- 1 cup vegetable broth
- 1 tbsp lime juice
- Sea salt and pepper to taste


- Basmati rice (cooked) LINK FOR RICE HERE
- Fresh greens

PREPARING

Mix all the ingredients for the curry in a saucepan. Start off with saute of the ginger, garlic and onion with some olive oil and add then the rest.

BASMATI RICE

PREPARING

Take the amount of Basmati rice you wish (remember it expands, but not as much as usual rice) and rince the rice 4-5 times until the water i no longer grey with starch. 

Take then a saucepan and fill it with 3/4 water and boil it. When cooking Basmati rice you do not need to measure the water as you do with usual rice. You then simply add the rice to the boiling water, but do make sure that the water cover the rice minimum double the amount. Boil then for 6 minutes and empty water and rice from saucepan. 

Fill then the saucepan with 1 ts butter and enough water for cover the bottom. Bring to heat until butter is melted with water and then add the rice. Tie then a towel over the lid for the saucepan for optimal damp conditions. Cook the rice on minimum heat for 6 minutes without disturbing the rice and voila!

APPLE CINNAMON PIE

DOUGH

- 250 g flour
- 50 g sugar
- 130 g butter
- Ice cold water

PREPARING

The trick is to have a chilled dough. 

Cut the butter (cold) in cubes, add sugar and flour and begin to mix with your hands. Add ice cold water partially until the dough is nice and firm before butting it in a plastic bag and chilling it in the refrigerator (do NOT put it in the freezer) for about 1-2 hours. 

Take then the dough out and shape it as you wish and whatever filling you want. I used this seasons fresh apples from Norway and added some sugar and cinnamon on top.

MANTY WITH MEAT AND ONION FILLING

DOUGH

- 200 g flour
- 100 g water (cold or room temperature)
- 1 egg
- 1 ts salt

Mix together in a bowl until a firm dough is shaped. For best results, should the dough be quite hard, but yet possible to form so do not overuse the flour. 

FILLING

- Ca. 300 g minced meat of your own choosing
- 1/2 chopped onion
- 1 ts salt
- 1/2 ts pepper

PREPARING

Place the manty in a steam-cooker and let them steam for 40 minutes. Serve with crem fraiche.
